In 1998 Roxanne married her high school sweetheart Don. After her diagnosis Don set aside his work to provide full-time care for Roxy until her passing this year. Together they raised 3 young men.
Roxanne had 3 boys: Don in 1997, Brad in 1999, and Bryce in 2001. Roxy worked as a full-time nurse and mother until ALS impacted her ability to do so. Along with their dad all three of her boys assisted with Roxy's care at home. Using their mom's recipes they prepared countless meals that the family enjoyed together.
Roxanne passed away on April 15, 2023 after battling ALS for 15 years. Roxy's legacy lives on through everyone that has been a part of her incredible story.

These are a collection of my family's favorite recipes. Some were shared with me, some I saw, tried and liked; others are family recipes, but most I wrote myself because I loved to cook and love good food. I initially wrote the book with just a few recipes for my mom and sisters, so after I pass away they could cook Don and the boys some of their favorite dishes. After I wrote it, I kept thinking of more and more recipes that I had filed in my brain. I gave my family a revised copy, and they liked it so much that my baby sister said they wanted to publish it. On the cover are my 3 precious children with a few of the dishes they helped prepare this Thanksgiving. I love to see them in the kitchen cooking. They are my proudest accomplishment, and I hate that our time has to be cut short. I know they will make great husbands!
FYI- My recipes might be a little heavy on the salt, butter and garlic for some people's taste. You can adjust it how you want, but I have never had any complaints.

This book was written as a tribute my family. I am terminally ill with ALS/Lou Gehrig's disease. The disease has left me paralyzed from the nose down, unable to speak, eat or drink. I can't use my hands so the entire book was written on a specialized computer that uses my eyes to type. The disease has robbed me of every independence and mobility but it can never rob me of my love for God and my family! I hope you enjoy!
Roxanne Roundtree, me, was diagnosed with ALS-Lou Gehrig's disease in 2008 at almost age 30. I am an active mother of 3 growing boys: Don (17), Brad (14), and Bryce (12). Before this disease took over, I was a home health nurse and traveled the Madisonville area caring for those who were not able to travel for health care. After my full time nursing job, I was also a full time mother. I was team mom, T-ball coach, home keeper, and cook. My boys are my everything. Although I am no longer able to move from the neck down or speak, I am still at every event that my boys are a part of.
Football games, rodeos, jackpots, baseball, stock shows, etc.,. I do it all!
I wrote the book over the period of a year using only my eyes. I have a specialized computer that tracks my retina and is controlled by my eye movements. Wherever I look is where the curser goes and I blink to select. This computer allows me to write, email, text, shop, and most importantly, communicate. Its an amazing piece of technology that is essential for living with any quality of life, when you have ALS.
Our story has been featured on RFD, Texas Country Reporter, and Imus in the morning. The proceeds contribute to living expenses, medical expenses, and caring for my children.
